不同包装材料对坛紫菜干品贮藏期间色素含量变化的影响

Effects of different packing materials on pigment content of Porphyra haitanensis during storage

摘要: 探讨不同包装材料对紫菜干品贮藏期间色素的影响,为提高紫菜干品品质、延长贮藏期提供参考依据。以坛紫菜为试材,分别采用PA/PE、PET/PE、PET、LDPE、HDPE、尼龙包装,于(25±1)℃恒温箱中贮藏,每隔7天测定坛紫菜叶绿素、叶绿素a、类胡萝卜素含量及其藻红蛋白、藻蓝蛋白、别藻蓝蛋白、藻胆蛋白含量的变化。结果表明:相比于PET、LDPE、HDPE、尼龙等单一材质包装材料,复合包装材料PA/PE可延缓叶绿素、叶绿素a和类胡萝卜素含量的降低,PET/PE可抑制藻红蛋白、藻蓝蛋白、别藻蓝蛋白和藻胆蛋白含量的下降。复合包装材料对坛紫菜色泽的保持效果优于单一材质包装材料。

Abstract: Effects of different packaging materials on pigment of laver during storage were discussed to provide references for improving quality and prolonging storage of laver. Using Porphyra haitanensis as experiment material, the contents of chlorophyll, chlorophyll-a and carotenoid and the contents of phycoerythrin, phycocyanin, allophycocyanin and phycobiliprotein from Porphyra haitanensis were determined every seven days during storage at (25±1)℃ constant temperature. Compared with the single material packaging of PET, LDPE, HDPE and PA, the composite packaging material of PA/PE delayed the decrease of chlorophyll, chlorophyll-a and carotenoid contents, PET/PE inhibited the decline of phycoerythrin, phycocyanin, allophycocyanin and phycobiliprotein contents. The effects of composite packaging material of PA/PE and PET/PE on the color retention of Porphyra haitanensis were better than the single material packaging of PET, LDPE, HDPE and PA.
