Advances in the study of sulfur dioxide removing technics from aquatic products

摘要: 水产品中二氧化硫残留量超标是非常普遍且严重的食品安全问题。近年来因水产品中二氧化硫残留量超标使我国水产品出口遭受严重损失。本文对二氧化硫的危害、水产品中的来源及其脱除技术进行综述,并结合之前的研究和本文作者的实践,对辐照技术保鲜水产品和降解水产品中二氧化硫等应用进行分析。

Abstract: The extra additives of sulfur dioxide in aquatic products are very common and serious problems, which have caused Chinese aquatic product export to suffer from heavy loss in the recent years. The paper reviewed the hazards of excessive addition of sulphur dioxide, the origin of sulphur dioxide and the sulphur dioxide removal technics in aquatic products. In accordance with the base of former study and the result of the author's practices, the irradiation treatment to degrade the residue of sulfur dioxide in aquatic products was proved to possess broad application foreground.
