Abstract:
To explore the nutritional value and difference of oyster in different stations of Zhao'an Bay of Fujian Province,the contents of basic nutritional component,amino acids,minerals,and fatty acids of
Crassostre angulata in 5 different stations of Zhao'an Bay were analyzed.The results showed that the contents of protein in 5 stations of of Zhao'an Bay were all high,especially in Tiancuo station which was the highest in the content of protein.18 kinds of amino acids were detected in these samples,among which there were 8 kinds of essential amino acids and 10 kinds of nonessential amino acids.The total content of amino acids in the oyster of Fengqi station was the highest,while the content of flavor amino acid and the FAO/WHO amino acid score were significantly higher than the other 4 stations.The mineral elements contents were rich in Zhao'an Bay and varied among 5 stations.The contents of Fe、Zn、Mn、Mg、K、Na and P in Fengqi station,the contents of Cu and Se in Chishiwan station,and the contents of Ca in Nanmen station were the highest.14 kinds of fatty acids were detected in 5 stations,including 9 kinds of unsaturated fatty acid with rich content,especially the ω-3 polyunsaturated fatty acid.The content of fatty acid and taurine of oyster in Liaoya station were higher than the other 4 stations.
