Abstract:
In this study,main nutritional components,amino-acids contents,mineral contents and fatty acid components in muscles and polysaccharide contents in other different tissues of
Misgurnus anguillicaudatus Formosa were analyzed and evaluated.The results showed that protein and fatty acid accounted for 16.3% and 4.0% in fresh muscles of
Misgurnus anguillicaudatus Formosa,respectively.Total content of eighteen amino-acids was 15.26%.The eight essential amino-acids made up 39.92% of the total amino-acids.Ratio of essential amino-acids to non-essential amino-acids was 66.41%.Total content of flavor amino-acids was 5.77%.Essential amino-acids index was 84.0.Tryptophan and valine were respectively the first and second limiting amino-acids.Mineral was rich,and calcium content was the highest reaching 683.60 mg per 100 g.Unsaturated fatty acids accounted for 62.16% of the fatty acids.The total contents of DHA、EPA and DPA accounted for 10.81% of the fatty acids;polysaccharide was also rich which reached to 6.49%(dry weight) in the entrails.These results provided clues for the deep processing and high value utilization of
Misgurnus anguillicaudatus Formosa.
