胶原特性及其制备方法研究进展
Research progress in collagen characteristics and its preparation methods

摘要: 本文阐述了胶原、明胶和胶原多肽三者的概念和不同点,介绍了胶原的结构以及Ⅰ型胶原和Ⅱ型胶原的差异,总结了胶原的七种制备方法,并对各种制备方法的优缺点进行分析,为水产动物资源制备胶原提供参考。Abstract: In this paper,the concepts and differences of collagen,gelatin and collagen polypeptide were expounded. The structure of collagen and the differences between collagen type I and collagen type Ⅱ were introduced,too. Seven preparation methods of collagen were summarized,while the advantages and disadvantages of each preparation method were analyzed to provide reference for the preparation of collagen from aquatic animal resources.
