福建省不同海域坛紫菜营养成分及重金属含量分析

Analysis of nutrient composition and heavy metal content of Porphyra haitanensis in different sea areas of Fujian Province

摘要: 为探究福建省不同海域坛紫菜的营养价值及主要污染物情况,本研究对福建省霞浦、漳浦和泉州坛紫菜的基本营养成分、氨基酸和重金属含量进行测定,并比较、分析、评价其营养成分和食用安全。结果显示,泉州坛紫菜的蛋白质和灰分含量较高,霞浦坛紫菜的多糖含量较高,漳浦坛紫菜的脂肪含量较高。霞浦坛紫菜的必需氨基酸(EAA)含量较高,泉州坛紫菜的总氨基酸(TAA)和非必需氨基酸含量(NEAA)较高,谷氨酸(Glu)和丙氨酸(Ala)是坛紫菜中主要的游离氨基酸,味道强度值(TAV)均大于1,赋予了坛紫菜特有的藻类鲜甜风味,其中泉州坛紫菜和漳浦坛紫菜Glu和Ala的TAV值较高。检测5种重金属含量发现,各海域坛紫菜的Pb含量符合国家限量要求。本研究旨在为福建省坛紫菜的开发利用和食用安全提供参考。

Abstract: In order to explore the nutritional value and main pollutants of Porphyra haitanensis in different sea areas of Fujian Province, the contents of basic nutrients, amino acids and heavy metals of P. haitanensis in Xiapu, Zhangpu and Quanzhou were determined, and their nutritional values were compared, analyzed and evaluated. The nutritional components and quality were also analyzed and evaluated. The results showed that the protein and ash content of Quanzhou P. haitanensis was higher, the polysaccharide content of Xiapu P. haitanensis was higher, and the fat content of Zhangpu P. haitanensis was higher. The content of EAA in Xiapu P. haitanensis was higher than that in Quanzhou. Glu and Ala were the main free amino acids in P. haitanensis. The TAV values of Glu and Ala were higher than 1, which gave the P. haitanensis unique fresh and sweet flavor. Among them, the TAV values of Glu and Ala of Quanzhou and Zhangpu P. haitanensis were higher. The Pb content of P. haitanensis was in line with the national limit. The purpose of this study was to provide a reference for the development and utilization and food safety of P. haitanensis in Fujian Province.
