福建省水产品质量安全现状与建议

The status and proposal of quality safety management to aquatic products in Fujian Province

摘要: 福建省水产品资源丰富,水产品具有营养价值高且味道鲜美的特点,在深受消费者青睐的同时,消费者对其要求也日益提高,近年来,得益于从产地到餐桌的严格管理,水产品质量安全总体稳定向好。本文从养殖、捕捞、加工和流通等方面出发,介绍了福建省水产品的规模和质量安全现状,针对养殖、捕捞、加工和运输过程中存在的污染物残留、滥用药物、冷链物流、加工安全、产品追溯和质量控制等问题和原因进行分析,进而提出相应的质量安全管理建议,促进福建省水产产业的健康安全可持续发展。

Abstract: Fujian Province is rich in aquatic products with high nutritional value and delicious taste. Deeply favored by consumers, and consumers' requirements for aquatic products are increasing. However, in recent years, there are still many safety incidents of aquatic products, which originate from the quality and safety problems of aquatic products. The status of quality safety management of aquatic product was studied from the aspects of aquaculture, fishing, processing and circulation, especially the situation and reasons of the problem such as pollutant residues, drug abuse, cold chain logistics, processing safety, product traceability and quality control were analyzed, which were linked to the aquaculture, fishing, processing and transportation. Then the proposal were propounded to improve the quality and safety management and to promote the sustainable development of aquatic products industry in Fujian Province.
