不同保存条件下菲律宾蛤仔的细菌学检测分析

Analyze the bacterial detection of ruditapes philippinarum stored in different conditions

摘要: 对比分析了菲律宾蛤仔在15℃、4℃、-18℃三种不同保存条件下,其存活率、菌落总数、大肠埃希氏菌数和弧菌总数随时间的变化及其之间的相关性。实验结果发现,4℃保存条件下菲律宾蛤仔的存活率最高,至96 h其存活率仍为100%。细菌学检测方面,随着存放时间的延长,-18℃下菲律宾蛤仔的菌落总数、大肠埃希氏菌数、弧菌总数基本维持恒定,均低于初始检测值;而15℃和4℃下菲律宾蛤仔的菌落总数和弧菌总数均呈不同程度的上升趋势,并且两者之间的相关性显著,相关系数分别为0.884、0.927,而大肠埃希氏菌数变化幅度不大。

Abstract: The survival rate, colony count, the number of Escherichia coli and the number of vibrio of ruditapes philippinarum stored at 15 ℃, 4 ℃ and 18 ℃ changing with time were determined, and the correlation between them were analyzed in this paper. The results showed that, the survival rate of ruditapes philippinarum at 4 ℃ at the time of 96h was also 100%. The colony count, the number of Escherichia coli and the number of vibrio of ruditapes philippinarum at -18 ℃ showed no significant change according to the increase of storage time, were lower than the values at 0h respectively. In contrast, the colony count and the number of vibrio of ruditapes philippinarum at 15 ℃ and 4 ℃ showed the rising trend of different levels, meanwhile, the correlation coefficient between them at 15 ℃ and 4 ℃ were significant, respectively 0.884, 0.927. However, the number of Escherichia coli showed no significant change at 15 ℃ and 4 ℃.
